Once known as “the sleeping beauty of Champagne,” the house re-ascended after being purchased by the Bollinger group in 2005. Based in the village of Aÿ, the style emphasizes a large Chardonnay component and low dosage. The Art Deco cellars from 1912 consist of 1.6 miles of chalk tunnels extending 75 feet underground for ideal temperature and humidity.
