Description

Apaluz Artesanal Joven Mezcal 1L is produced by maestro mezcalero Antonio Pañuco using traditional artisanal methods in Oaxaca — roasting Espádin agave in earthen pits, open-air fermentation, and double distillation in copper pot stills. Bottled at natural strength without dilution in a 1-liter format.

Artesanal designation under the Mexican Mezcal standard means the production uses traditional pit roasting, stone mills or tahona for crushing, open wooden fermentation vessels, and copper or clay pot stills. This distinguishes Apaluz from both Ancestral mezcal (clay pot only) and industrial mezcal (diffuser and autoclave). The earthen pit roast is the source of mezcal’s characteristic smoke — pipin hot coals and volcanic rocks transfer smoke into the agave fibers during the multi-day roast.

Tasting Notes

Nose: Roasted agave, wood smoke, citrus, and tropical fruit. Palate: Smoke, cooked agave, green herbs, and earth. Finish: Long, smoky, and mineral.
