Description
Caffo Maraschino is produced by the Caffo family distillery in Limbadi, Calabria — a dry, clear maraschino liqueur distilled from Marasca cherries, then sweetened and filtered. Maraschino is a traditional Italian liqueur dating to the Dalmatian coast, used as an essential ingredient in classic cocktails including the Aviation, Hemingway Daiquiri, and Last Word.
True maraschino is distilled from the fermented Marasca cherry (including pits), producing a spirit with both fruit and almond-like character from the cherry kernel. It is then redistilled to a neutral state, sweetened slightly, and bottled clear. This distinguishes it from cherry liqueurs like kirsch or cherry brandy — maraschino is drier, more neutral, and specifically used for its aromatic cherry-almond note in cocktail applications.
