In Santiago Matatlán, the heart of mezcal production in Oaxaca, Margarita Blas and her son Carlos Mendez produce mezcal artesanal under the Productores del Buen Agave name, launching Cruz de Fuego in 2015 to early awards and acclaim. Every expression is made with fully traditional methods — no automated processes: agave cooked in conical earthen ovens, milled with a stone tahona, fermented in wooden tinas, and twice-distilled in copper pot stills, staying true to the terroir of its place of production.
