This unique spirit is a tribute to the untamed beauty of the Durango landscape, where the Maguey Cenizo (Agave durangensis) thrives amidst the rocky terrain. Like the scorpions and owls that inhabit this remote wilderness, Cutwater Mezcal Añejo symbolizes defiance, solitude, and wisdom.
The production of this mezcal is a labor of love, starting with the traditional method of roasting the agave hearts (piñas) in volcanic rock pit ovens. This slow-roasting process imparts a distinct smokiness that becomes a hallmark of Cutwater Mezcal Añejo. During the fermentation, wild yeasts from the surrounding environment naturally inoculate the sweet agave juice (mosto), adding layers of complexity to the spirit. The journey culminates in a year-long rest in Cutwater Whiskey barrels, which are transported all the way from the San Diego distillery to Durango.
The result is a mezcal of exceptional quality, combining the rich agave character with notes of smoke, vanilla, and oak, all acquired through the meticulous production process and aging in whiskey barrels.
