Knob Creek 21 Year Old Kentucky Straight Bourbon Whiskey is one of the oldest age-stated expressions ever released by Knob Creek — 21 years in new American oak from the Jim Beam Distillery in Clermont, Kentucky, bottled at 100 proof, representing the upper limit of the Knob Creek extended maturation program.
Knob Creek was created by Booker Noe in 1992 as a return to the pre-Prohibition bourbon philosophy — higher proof, longer age, and full flavor. The standard 9-year, 100-proof expression has defined the brand for three decades. The 21-year pushes that philosophy to its extreme: two decades in new charred American oak adds aged leather, dark caramel, dried cherry, and char that nine years cannot develop. At 100 proof the full structural weight of that maturation is preserved without dilution.
