Cutwater Colonial Joven Mezcal
Description
Cutwater Colonial Joven Mezcal is produced from Agave durangensis — a wild agave variety endemic to the State of Durango in Northern Mexico — extracted from the hills of Rancho La Campana de Santa Elena and roasted in traditional volcanic rock pit ovens, then open fermented with wild ambient yeasts to produce a mezcal that reflects the distinctive character of the Mezquital municipality in Durango rather than the more common Oaxacan Espadín style.
Agave durangensis (Maguey Cenizo) is one of the more unusual agave varieties used in commercial mezcal production — growing at altitude in the harsh, semi-arid Durango landscape among scorpions and owls, it produces a distinctive mineral and earthy character quite different from Oaxacan Espadín.
