Macurichos Mezcal Espadin Conejo (Rabbit) is a pechuga-style mezcal from Gonzalo Martinez in Santiago Matatlán, Oaxaca — the Espadin base distilled with whole rabbit suspended in the still during the final distillation, producing the traditional Oaxacan pechuga-style mezcal that incorporates a protein, fruits, and spices into the final distillate.
Pechuga production is a Oaxacan ceremonial tradition: during the final distillation, a whole protein (most commonly chicken breast, the original “pechuga,” but also rabbit, iguana, turkey, or even mole) is suspended in the alembic alongside fruits, nuts, and spices. The vapors pass through and around the suspended ingredients, capturing aromatic and structural character from each. The result is a more complex, fruit- and spice-driven mezcal with subtle savory depth from the protein. Macurichos’ organic agave and ancestral-method approach gives the Conejo version of pechuga its distinctive character.
