Old Elk Wheated Bourbon is a high-wheat bourbon from master distiller Greg Metze — built on a mash bill of 45% wheat, 51% corn, and 4% malted barley, and brought to proof slowly over weeks rather than days to preserve the spirit's delicate flavors.

The unusually high 45% wheat content gives the bourbon a rich mouthfeel and lets the corn's natural sweetness and the barrel's light vanilla notes come through. Greg Metze brought four decades of distilling experience — including 14 years as master distiller at MGP — to Old Elk's production. The slow-cut proofing process adds fresh Colorado mountain water in small increments over weeks, keeping the spirit cool and avoiding the loss of lighter flavor compounds that rapid proofing can cause.
