The expression commemorates a 1910 fire on the bottling line that forced mature whiskey to be re-barreled — the happy accident that became Old Fine Whiskey. Entering the second barrel at a low 100 proof allows more sweet wood sugars to dissolve into the whiskey, creating a rich, complex profile.
