Clairin Sajous is a traditional white Haitian rum agricole from Distillerie Sajous in the Saint-Michel-de-l’Attalaye region of Haiti — part of the Clairin project that documents Haiti’s traditional small-scale rum production at unique terroir-driven palenques (guildives). Double-distilled from fresh sugarcane juice, wild yeast fermentation, and bottled unaged at natural strength.
Clairin is Haiti’s traditional agricultural spirit, produced for centuries at small local distilleries using methods that have changed little. The Sajous expression uses the Cristalline cane variety, with multi-day wild yeast fermentation producing distinctive funk and herbaceous complexity that industrially produced rum cannot replicate.
