Clairin Vaval is a traditional white Haitian rum agricole from Distillerie Vaval in Cavaillon, Haiti — part of the Clairin project documenting Haiti’s traditional small-scale rum production. Double-distilled from fresh sugarcane juice with wild yeast fermentation, bottled unaged at natural strength to showcase the distillery’s terroir-driven house style.
Clairin is Haiti’s traditional agricultural spirit, produced for centuries at small local distilleries (guildives) using methods that have changed little. Vaval uses local cane varieties and multi-day wild yeast fermentation, producing the funky, herbaceous, vegetal complexity that has made the Clairin project widely admired among rum collectors.
