Old Potrero 18th Century Style is a pot-distilled 100% rye malt whiskey from Hotaling & Co. Distillery on San Francisco’s Potrero Hill — an attempt to recreate the original whiskey of America, marking the return of pot-distilled whiskey to the United States. Aged in handmade, lightly toasted (not charred) new American oak barrels in the 18th-century tradition, before charring became the American whiskey norm.
In the 18th century, barrels were made by heating staves over a fire of oak chips so they could be bent and formed; the inside became toasted but not yet charred. Charring developed later as coopers learned that allowing the heat to continue would set the inside on fire. Old Potrero 18th Century uses several uncharred barrels (new and used) to achieve a balanced character that pre-dates modern American whiskey production methods.
