Pedro Ximénez is the sweetest and most intensely concentrated sherry style — produced from sun-dried PX grapes in Jerez, the resulting wine and cask carry intensely concentrated raisin, fig, dark chocolate, and molasses character. At 3 years in fresh PX casks after 7 years in bourbon, the PX influence is deeply integrated yet the characteristic Springbank oiliness and damp dunnage note hold their own against the heavy PX character.
